In terms of the recipes, I made slight adjustments to both including adding a little
more sugar to the first recipe and adding a pinch of
turbinado sugar to the top of the muffins in both.

I used only a tad
more than 3/4 cup of
sugar (
turbinado sugar) instead of a whole cup, and increased the apple sauce by a little bit.
Another alternative is to try
turbinado sugar, which is a little
more healthy than table
sugar and not as dark as coconut
sugar.
I recommend rolling the cookies in
turbinado sugar rather than granulated for a
more festive - looking cookie.
I added salt to the batter and I used
turbinado sugar (raw
sugar) when she called for demerara
sugar — which is
more intensely flavor and what I would of used had I not just had
turbinado on hand.
Generally speaking, a 1:1 ratio for refined to
turbinado sugar works — but be mindful that
turbinado is coarser, and can takes up slightly
more volume.

more granular and free flowing and does not clump up like brown
