I had wanted to make a
more traditional couscous salad that contained garbanzo beans, and a lemon dressing, but the only
recipe that I knew contained feta
cheese which is definitely not a
vegan food option.
I'm not sure if it was the
vegan cream
cheese or the
recipe, but someone had mentioned that the peanut butter part tasted
more like cheesecake than peanut butter and I agreed.
I'm planning on doing lots
more experimentation with
vegan cheeses and will definitely post if I'm able to come up with a
recipe using something other than cashews!

ETA: I have tried this
recipe with both
vegan and vegetarian cream
cheese and I can honestly say that I prefer it with the
vegan cheese because it has a better
more stable and solid texture than when done with the vegetarian
cheese making it have a
more pate style to it.
If you are concerned about calories, adding additional toppings like
vegan cheese, sour cream and
more, will up the calorie count of this
recipe depending on how much you add.
