But if you're looking for something a bit
more fun, try this breakfast bowl that features
zucchini noodles coated in an avocado sauce, an egg, and diced up sweet potato.
To serve, divide the
zucchini noodles evenly amongst 6 shallow bowls, and spoon the beef stroganoff over the
noodles and top each bowl with
more parsley, chives and a dollop of Greek yogurt if desired.
If you want to thicken the sauce, squeeze the
zucchini noodles using a cheese cloth before adding it to the sauce, or whisk one tablespoon cornstarch with one tablespoon milk and add the mixture to the boiling sauce or simply add
more cheese to the dish.
Anyhow, I realized that winter is drawing to a close, so it was high time I started jamming in all the sweet potato goodness I could, before everyone becomes
more interested in stuff like
zucchini noodles.
1 to 2 tablespoons sesame oil +
more if needed based on taste 1/2 small to medium sized red onion, peeled and sliced 1/2 medium sized
zucchini, unpeeled and chopped 1/2 medium sized summer squash, unpeeled and chopped 1 cup sugar snap peas, cut once in half crosswise 1 cup shiitake mushrooms, chopped 1 to 2 garlic cloves, minced Pinch of salt 1/2 red bell pepper, chopped 1/2 green bell pepper, chopped 1/2 cup red cabbage, shredded 2 small carrots, peeled and shaved into strips 1/2 pound linguine
noodles, cooked 1/4 cup mushroom broth 3 tablespoons soy sauce 2 tablespoons hoisin sauce 2 tablespoons Chinese oyster sauce Green onions, diced for garnish
If you let the hot
zucchini noodles and sauce sit for a few minutes, the
noodles will soften a little
more.
I sauteed the sweet potato and
zucchini noodles for about 5 minutes to get them a little softer and
more noodle - like.
After I prepared the
zucchini for the raw vegetable sesame
noodles, I wanted to play with my spiral slicer some
more!
I served my spicy Asian
zucchini noodles with grilled lemon, garlic and basil tuna but vegans can add
more nuts or serve this with quinoa or tofu for a main dish.
If you prefer a slightly
more tender pasta, you can quickly sauté the
zucchini noodles over medium heat for 2 - 3 minutes, or serve this sauce over your favorite high - quality pasta instead.
This pho recipe doesn't contain any added sugar or fish sauce (which also contains sugar) and I swapped out rice
noodles for
zucchini noodles because they contain a heap
more nutrients and fibre!

more wholesome option.
I use
zucchini noodles as a wheat - free alternative to pasta, and it's a great way to add
more vegetables into a meal.
Cooking spaghetti squash is slightly
more time consuming than
zucchini noodles, but unlike
zucchini noodles, the cooked
noodles save well in the fridge and can easily be reheated and used throughout the week.
Repeat the layers: 1/3 of the
noodles, the other halves of the ricotta,
zucchini, and «sausage,» and
more sauce.
If
zucchini isn't your favorite or you'd prefer something with a bit
more bite, let turnip or carrot
noodles be the star to this soup show!

You can use real
noodles in this soup if you'd like to, but for even
more of a nutrient boost I like to use
zucchini «
noodles» for an extra serving of veggies in each bite.

I substituted yellow and green
zucchini for
noodles, added some turkey bacon to the ground buffalo to add even
more flavor to the melange of fresh herbs, onions and garlic and mixed some pesto into my marinara sauce.
I actually prefer the
