Most GF recipes / flours cook up heavy & dry.
I live in China, so it is impossible for me to find all the unusual flours in
most GF recipes.

I try to base
most of my
recipes around cheap ingredients and naturally
gf foods.
You can use any
GF flour blend you choose, but I like Pamela's
GF Artisan Blend in this
recipe (and
most others.)
For today's waffle
recipe, I wanted to create something that was light and fluffy, naturally gluten - free, and without all the starch that
most GF flours / waffles come with.
I very rarely dust things with flour, though, because it kills me to sacrifice the flour, which is one of the
most expensive ingredients in
gf recipes.

recipe for a flour blend that offers many different options for each ingredient, in case you don't have one on hand or can not use a particular ingredient.
PS In
most other
GF / dairy - free
recipes, I have excellent success substituting tapioca starch or arrowroot powder for potato starch (depending on the balance of other ingredients), but I'm stumped when it comes to potato flour.
And I must say that this
GF recipe behaved the
most like «real» bread dough that I've tried.
Most recipes & store - bought
GF offerings have dairy, and I'd love to know if it's possible to achieve something resembling a baguette with either almond or coconut flour.

Awesome post — to be honest, I think if you got a good
GF flatbread out of the pita bread
recipe, that's
most of the point anyhow (especially when you're just using it for dipping).
I wish I had seen the
recipe here before I wasted time and ingredients with the
recipe from the book... I'm pretty sure you can just leave the gums out altogether...

You will more than likely have to beat it longer but that's one of the beauties of
GF baking: there's no pesky gluten so over-mixing is almost impossible in
most gluten - free
recipes.
