You will notice that

call for a large amount of eggs.
Eggs are usually needed in
most coconut flour recipes but there are a few
recipes I've found that do not
call for eggs.
That's because
coconut flour absorbs a lot of liquid, which is why
most recipes call for a very small amount of
flour.
Most of the
coconut flour recipes call for other
flours and xanthar gum (sp).
So
most if not all
recipes calling for
coconut flour, require more eggs and sometimes more butter.
Most healthy, gluten - free
recipes call for almond
flour,
coconut flour, or arrowroot
flour, each of which I keep stocked in my pantry.
