most important part of a
vegan mac and
cheese recipe is the
vegan cheese sauce.
Sadly, what I was
most disappointed, was the abundant use of
vegan substitutes (ie
vegan cream
cheese, sour cream and Vegenaise), although that probably helps prep time for restaurants.
This dish has considerably less fat than
most traditional and
vegan mac and
cheeses but without compromising the creaminess and flavor.
Most of the big supermarkets will even offer
vegan cheeses, although it is likely to be a case of trial and error until you find one that suits your palate.
