Use a reduced fat cheddar if you're really trying to cut down on the fat, but there isn't so
much cheese here to set you back.

cheese and dairy too
much (it's pretty hard to get raw milk around

I do eat salads out at restaurants fairly frequently though, and my three favorite ones to get are a nut - crusted goat

here), a Pittsburgh Steak Salad with warm Riviera dressing (I am desperately trying to figure out how to make this dressing... when I do, you will know) and Chicken Souvlaki Salad.
This recipe was very good, but I have to agree with some of the other reviews
here - it does call for way too
much cheese.
