The first steps
in making this version are pretty
much the same as when making regular
coconut butter, except this time, we're not only adding unsweetened shredded
coconut to the bowl of our food processor, we're also adding
coconut oil and a little bit of salt.
Whipped
coconut oil still tends to harden
in very cold temperatures, but not as
much as it does if you don't whip it.
Since nuts have lots of healthy fat, you don't need
much butter (or
coconut oil, if you prefer)
in the recipe for a rich, creamy texture.
The education has given me a
much deeper and better understanding of nutrition and how it works, and most importantly, it has helped me to critically assess some of the false claims that circulate freely as truths
in the food / wellness world (
coconut oil is a «superfood,» our bodies need «cleansing» foods, etc.).
He's a little older so we were able to get him to stop licking his mouth so

much honey
in the ingredients.
While a typical piña colada might be high
in calories, this version, with the addition of lite
coconut milk and flax
oil, is a
much healthier option.
These are best kept
in the freezer for a couple reasons, # 1 —
coconut oil mixed with sunbutter is pretty
much a bit runny at room temp and # 2 — that way they don't all get eaten!
Melting down 100 % cacao chocolate instead of using cacao or cocoa powder makes the pudding
much richer and helps it set
in the fridge without cooking or thickeners or
coconut oil.
Unendingly forgiving and customizable, you can adjust the ingredients and make sure you're getting as
much coconut oil as you want all
in one convenient serving, just like this Banana Orange Smoothie:

I have used
coconut oil from many companies but have settled on Wilderness Family Naturals centrifuge extracted
coconut oil because after
much research I realize this
oil is the least processed
in any way.
I realize that to make a statement that
coconut oil is more successful than drugs
in treating Alzheimer's Disease is not
much of a statement at all, if drugs are one of the primary problems.
They're also off because I didn't quite use up the seasoned
coconut flour, and I don't know exactly how

much got left

in this recipe since I am trying to ingest more
coconut oil on a daily basis and I find it too
much like just putting slightly better tasting shortening
in my mouth... well this is a bit like putting bitter butter

It is a traditionally produced
coconut oil made by hand
in small batches,
much the same way people
in the Philippines have produced it for thousands of years.
My best guess is that the crust was either from too
much gelatin, or (more likely) from the
coconut oil on top of the yogurt hardening
in the cold fridge.
Nuts and seeds and
coconut flakes all already have a lot of natural
oil in them, so you don't have to add
much extra
oil to get them to brown
in the oven.
If you aren't opposed to it, a couple of tablespoons of
coconut oil blended
in will make it set that
much better too.
As is to be expected,
much of the research published
in peer - reviewed journals showing that
coconut oil enhances heart health
in recent years has been conducted outside the U.S.,
in tropical cultures where
coconuts grow.
If you minimize the water
in this recipe (using only as
much as you need to blend it smoothly) and perhaps blend
in a little extra
coconut butter or some
coconut oil, then refrigerate it until it's thickened, it'd make a nice creamy dessert topping!
Back
