As for sulforaphane content, I haven't yet found any references to exactly how
much sprouts contain, but if one goes by a study listing 62 mg of glucosinolate per 100 g of broccoli, and
sprouts have up to 100x times that, some common varieties of mustard
greens have been tested to have about the same amount, with white at 6,410 mg.
