much, I discovered that in order to substitute
milk for the cream, instead of 2/3 cup cream you can use 7 tablespoons
milk and 3 1/2 tablespoons butter melted (stir them together) and add in place of the cream.
We try not to indulge in too
much dairy, so I substituted soy / rice
milk for the
milk, and a silken soft tofu
for the yogurt.
I've also made this with almond
milk, but didn't care
for the flavor as
much.

Hi Jenni, I use Ayam (straight, not light) coconut cream and coconut
milk for pretty
much everything as I think it is one of the best tasting ones out there and they don't add any thickeners or fillers.
I've recently started only exclusively using almond
milk for my hot chocolates because dairy is just a no - go
for my stomach and I actually prefer it
much better!
Coconut
milk kefir also has a
much milder and less - tangy taste than traditional
milk kefir, which makes it a good choice, even
for those who aren't dairy free.
Also, if he has issues with goats
milk powder, do ou think that using goats
milk turned into kefir could work or too
much overload
for his belly?
Also, a note about substituting
for the buttermilk, I wouldn't... so
much of the supermarket
milk is now Ultra Pasteurized (also known as Ultra High Temperature pasteurized).
The only thing about goat
milk is you have to add back the nutrients that are missing and dilute it by half with water bc the protein content is too
much for baby's kidneys, that's it.
It should also be noted that goat
milk / goat
milk powder contains too
much protein
for an infant's kidneys to handle, so goat
milk and goat
milk powder must always be diluted with water.
Anyway, I might try your recipe
for my next batch since the powdered goat's
milk is
much easier to get than the raw goat's
milk (about 30 minutes away and they sell out very quickly so sometimes you get all the way over there and they have none!).

I usually don't follow
much of a ratio: I pour flour (s) in a big bowl, add whatever liquid I have around (non dairy
milk, water, cold broth, maybe a little bit apple cider, or some beer too, which gives lightness to the crêpes), some flax gel (1 Tbsp ground flax seeds + 3 TBSP warm water), some salt or maybe a little sugar, sometimes spices like curcuma and black pepper, or tandoori spice powder etc, stir until the consistency pleases me, adding more liquid if necessary, let it sit
