With a booming
oil and gas industry, Houston avoided

Some manufactures recommend refrigerating natural peanut butter so the
oil doesn't separate as
much — this
works, but then the peanut butter is impossible to spread since it's so thick.
Well, Tony, I wouldn't recommend eating a stick of it a day, but Earth Balance sticks
work much better than
oil for a non-dairy version of a sauce like this that traditionally uses butter.
I didn't like using that
much butter so good to know that coconut
oil had
worked well.

We use Justin's around here, but something tells me most of the natural varieties (that don't have
much oil separation) will
work just as well.
As
much as I love, love, love coconut
oil (and ghee and lard for non-vegan meals), and will certainly continue to use it, some dishes simply
work better with the flavor of olive
oil.
