rice, meat,
bean and legume was bathed in masala sauce — so
much we licked every last drop!
Whether it's your last meal or just a quick dinner for the family, I hope you enjoy this Black
Beans and Rice recipe as
much as we do!
Much like the Nicaraguan «gallo - pinto» (
rice and beans), the combination of
rice and legumes forms a complete protein.
I used: powdered lemongrass for the bottled, onions for the shallots, Penzey's sweet curry powder plus 1 tsp Chinese chile garlic paste for the red curry paste, three times as
much garlic, a full tablespoon of sugar (brown), mung
bean noodles for the
rice vermicelli, green
beans (par - cooked in the microwave then salted
and blistered in the wok) for the peas, twice as
much cilantro, an equal amount of chopped scallions,
and an equal amount of chopped peanuts as a garnish.
While the
beans and rice cook, prepare the tahini cheese sauce by whisking everything together in a small bowl, using as
much water as needed to get a nice thick but smooth consistency.
I am 11 weeks pregnant

much only eating Trader Joes Hashbrown shreds with blackbeans
and pico for breakfast,
and black
beans /
rice pico for lunch
and dinner.
Rice,
beans,
and veggies — it doesn't get
much easier than that.
I can open up
and heat a can of green

rice, but after all of the effort put into the main dish, I really don't want to think
much beyond that.
