As
much as I love Butternut
Squash I really can't disassociate it with the winter months so I tend not to eat it during Spring and
Summer.
Anyway, this dish is a
much better way to use zucchini or other types of
summer squash: sauté them in olive oil and mix them together with some chopped basil to make a delicious pasta dish.
Before making this recipe I stuck to winter
squashes for creamy soups but opting for
summer squash, especially this time of year, will be
much cheaper and also keep you eating seasonally which is always a good thing.
Using a vegetable peeler, slice down the
summer squash, creating ribbons, rotating until you've used as
much of the
squash as you can.
As
much as I say
summer is my favorite season, based purely on produce, I do long for winter
squash all year round.

Summer Squash Soup
