Place a generous dessert spoonful of chocolate pudding mix into each
lined muffin hole and spread it out so it evenly fills the hole.
Preheat oven to 190 C and line ten
muffin holes with muffin cases (or use a silicone muffin tray, which I prefer).

muffin holes.
Pour the vanilla mixture into the 8 ″ tin (or divide between
the muffin holes) and smooth the top.
Press the mixture into the lined 8 ″ tin (or if making mini's, a spoonful of mixture into the bottom of
each muffin hole).
Divide the batter evenly between the prepared pudding moulds or
muffin holes and place in the centre of oven to bake for approximately 40 minutes.
Press a spoonful of mixture into the bottom of each standard
muffin hole or a couple of spoonfuls into each texan muffin hole (or the whole lot into the 8 ″ tin) and place the pan in the fridge to set.
Divide the vanilla mixture between
the muffin holes (or pour into the 8 ″ tin) and smooth the top.
When the chocolate filling is smooth, spoon it into
the muffin holes and smooth off the tops.

If you're using a non silicone mould, line
the muffin holes with plastic wrap for easier removal later.
The hardest part is probably spooning them into
the muffin holes and making sure you have fully enclosed the raspberry centres.
