We use a standard - sized muffin pan when baking this recipe; if you were able to get 18
muffins out of this recipe, it's possible that each muffin well was slightly less full or you used a bit more apples than what was used to develop the recipe.

of the moisture
out of the zucchini before adding it to the mix and I also cooked it at gas mark 4 (180C) for the same amount
of time listed in your
recipe.

out to be very popular.

yum, I swapped
out 1/2 c
of flour for 1/2 c wheat bran, bran - banana

Here's what I changed: I used a 15 - oz can
of pumpkin (not pie filling — just pumpkin puree) in place
of the bananas; I swapped
out the spices for about 1 tsp each
of cinnamon and ginger, and mixed those in with the pumpkin first; I opted for the larger volume
of maple syrup from the original
recipe, as the pumpkin wouldn't contribute sweetness the way the bananas do; I baked the batter as a dozen standard
muffins, which took about 20 minutes at 350.

Like you I love cranberry orange
muffins we have them at work and every time I see one I grab them I have been recently switching to the Paleo diet and found your
recipe for blueberry
muffin bites and I made them they're wonderful but still my craving for the orange cranberry
muffins out way the blueberry
muffins so I altered your
recipe a bit I used cranberries instead
of blueberries and an orange instead
of a lemon and boy it turned
out just as wonderful as the blueberry

recipe out and made it as a loaf instead
of muffins.
of course I did not cook the cornmeal and made them as a straight up
muffin recipe and they came
out absolutely delish!!

recipe since it included both quinoa and chia (my new two favorite healthy ingredients) I recently tried making these following your
recipe exactly and mine didn't come
out so well... they looked great but the inside was doughy and I used cupcake liners and they baked right onto the liner so I could only eat about half
of the
muffin = / I will definitely try another

of disappointed.

I made a tiny
muffin sized one
out of the mixture to taste before decorating as the large cake was to be a gift and I hadn't used a vegan Christmas cake
recipe before.
It is so yummy and although one
of my fav pumpkin
recipes is your pumpkin chocolate chip
muffins / bread, I will definitely have to try some
of these
out.
I tried another
recipe like this where I just cracked an egg into the ham pockets, they seemed slightly bland and it was a terrible mess to try to clean
out of the
muffin tin.
You can actually make this
recipe into mini
muffins: Just double the ingredients and bake them in a mini-
muffin pan at 300 °F (150 °C) for 10 minutes or until a toothpick inserted in the center
of a
muffin comes
out almost clean.
UPDATE May 2017: The original
recipe below remains an EXCELLENT
recipe, however by adding 1/2 cup
of liquid like coconut milk, nut milk, or bone broth the batter blends smoother and the final
muffins come
out of the oven with a moist inside and toasted outside.
