The
mushroom mince is such a clever idea and it
works perfectly in all those
dishes where you would normally use meat mince.
And as always, the slow cooker
worked its magic — the chicken was moist and fall - apart perfect, the
mushrooms were tender and juicy, and the sauce brought the
dish together in mouth - watering harmony.
On impulse, I added a handful of sugar snap peas — growing in abundance near the grill — as a crunchy side
dish for a quickie lunch break from yard
work (and a worthy repeat of the previous nights» dinner for four — even meat - eaters give thumbs - up to grilled portabella
mushrooms).
If these
mushroom varietals are not easy for you to find, the good «ol cremini
mushrooms will
work well in this
dish, too.
Grilled salmon, lamb or beef
work well, as do
dishes with
mushroom, olives and savory herb (think Oregano, Pepper, Thyme, Rosemary and Sage) seasonings.
These wines
work well with earthy
mushroom and winter squash
dishes too!
Roasted squash, Brussels sprouts, or
mushrooms would also
work wonderfully for this
dish.
It makes the loveliest fillings for morning omelets or frittatas and
works well in my simple weeknight one
dish meal of white rice, sliced green onions, sliced fresh
mushrooms, diced roasted poblanos (optional) and ground Italian sausage for the Bennett Crew and a poached egg for me.
(I do, however, continue to
work as many veggies as I can into our meals, such as using a heavy hand with fresh herbs, onions and
mushrooms in a pasta
dish.)

works as a hearty main
dish or a flavorful side
dish.

mushrooms (Husband, and «sin salsa» for the Sprogs — declared favourite Sprog chicken
dish of all time).
