Our first evening, we had pumpkin soup to start which had these amazing
chewy mushrooms in it and warm bread on the side.
I'm a foodie and I knew there was something in the potatoes that was of a meaty flavor and that there was neither any sour cream nor cream
of mushroom in it which most copycat recipes seem to add.
My brother, however, HATES mushrooms; he will refuse to eat anything that has even a
single mushroom in it.
I also make my own mushroom gravy with pieces of
mushrooms in it for additional flavor and heft.
I haven't yet
used mushrooms in it, but I plan to and use less stock as mushrooms give out a lot of water:)
It didn't take me trying a dish
with mushrooms in it or my mom forcing me to eat one, I just woke up one day craving them.
Then cauliflower instead of broccolini and no mushrooms (my husband wouldn't touch it if it had
mushrooms in it).
I typically make several batches of this and keep in the refrigerator or freezer for easy meal prep at Thanksgiving or for when I get a pregnancy craving for something with
mushrooms in it.
It uses rice instead of bread, and it has chunks of sausage and
mushrooms in it to add some substance to it.
