I love your blog... Loved this recipe since it included both quinoa and chia (my new two favorite healthy ingredients) I recently tried making these following your recipe exactly and mine didn't come out so well... they looked great but the inside was doughy and I used
cupcake liners and they baked right onto the liner so I could only eat
about half of the muffin = / I will definitely try another of your recipes... but I am kind of disappointed.

not too crazy
about buttercream frosting in general so next time I might cut the amounts in half but no complaints
about the

As we are officially in Spring now but
not really with all the snow still lingering, these
cupcakes will be perfect to forget
about our current predicament.
Secondly, there was something
about the
cupcakes in this first batch that wasn't, well, cupcakey.
The
cupcakes don't rise much so you don't need to worry
about over-filling.
While this definition sounds
about right it does
not describe how delightful
cupcakes look and how delicious they taste.
I was thinking that maybe a picture of the batter before it goes in to the
cupcake pan might help some of us feel a little better
about some of the differences we don't know to expect with paleo style recipes.

cupcake / brownie is only
about 40 - 50 calories because there is no oil / eggs / butter, and the topping is only
about 20 - 30 calories because there's
not that much of it!
What's
not to love
about a
cupcake?
Don't get me wrong, I love
cupcakes and pies, custards and pastries — but there is something so classic
about a chocolate chip cookie.
I'm
not crazy
about buttercream so I've topped this
cupcake off with a bittersweet ganache instead.
The tomatoes are taller than I am (that isn't saying much), the carrots are doing wonderful (see previous post
about carrot cake
cupcakes), the bean are going for broke, and we have more peas than anyone should ever have at once.
I'm
not sure if I can really call these
cupcakes «mulled,» because technically, there's no actual mulling, assuming mulling is the whole process where wine and spices are simmered together, which I'm
not actually sure
about.
Also, if you've any worry
about not having a doughnut shape baking tray fear
not — I simply piped my doughnuts into a shallow
cupcake tray and it worked a treat!
However, don't just take my word for it, how
about the word of my 6 year old's
cupcake customers this summer who went NUTS for this flavor?
The only thing I would say
about using canned whipped cream is that it doesn't last long, so don't top the
cupcakes until you are ready to serve them, the cream tends to melt quickly.
There's really
not a thing that's good for you
about cupcakes, which may also contain trans fats, artificial colors, and salt.
Things were starting to getting a tad heavy in this section before you stopped by — I mean really, it's only muffins and

about you, but I'm drawn to eco-friendly lunch containers like a kid to a

They are easy to store and relatively inexpensive, so when your toddler takes the reusable
