I had a beautiful bowl with amazing
roasted carrots, a wonderful tomato, quinoa and parsley salad and a great
cabbage dish — it might
not sound that special, but trust me it really was.
We don't eat a lot of meat and also keep a kosher kitchen, so here are my go to's these days: three bean veggie chili (inspired by whole foods — GREAT leftover food);
roast chicken (Ina's); stir fries with tofu or chicken (super into
cabbage and you can get it to taste like moo shoo with the proper sauces);
roasted brussel sprouts with barley, cranberries, walnuts, and some goat cheese depending on who you are; grilled chicken (breasts... I know they're
not your thing).
Another great thing about Blue Apron's Whole 30 box to me was it introduced me to certain foods I might
not have sought out to buy at the store to cook myself - for instance I've never made shrimp at home before or
roasted cabbage - yet both were SO good and something I plan to make again in the future!
I love how easy this
roasted cabbage is to prepare, but, don't mistake easy prep for a bland dish!
While I am also partial to the steaming method (especially potatoes with a sherry vinegar, black pepper and olive oil dressing), I really can
not go past a big tray of
roasted sweet potato, cauliflower or
cabbage.
If you don't like
cabbage, I'd encourage you to try this recipe... the «
cabbage» taste really disappears and leaves a sweet and
roasted treat.
