It may be in the high 80's this week, but I've been in
need of some comfort food lately.
It's a nourishing meal when you're in

This is going to become my go - to meal to share with a friend in

I had this on my list for a while, and I was definitely in

We were mixed up and rattled, and were in definite

By now I am almost fully pledged vegetarian (I still eat fish sometimes though, but that
need decreases) As a former meat eater I enjoyed Golabki, Flaki and Pierogies, both are polish cuisines because even though I was born in Germany, half my heritage (specific: my mother) comes from Poland and I grew up with traditional polish cuisine, which still counts as
comfort food to me (Omg I
need to mention I tried so often to make Bigos Vegetarian without sacraficing the taste, but it's still a challange) Bu talso my other half
of heritage come from Hungary, I also enjoy traditional Hungarian
food like Langos and Palacsinta (so good) Basically I've been brought up with no fear from anything new, I have no prejudices, try everything I can and enjoy home cooked meals made with local basic ingridients the most!
Normally, this alone is enough to get me craving a hot bowl
of soup but, add in the fact that I'm fighting a stubborn cold that just won't go away, and it's pretty much guaranteed there's going to be some sort
of comfort food happening here and this was exactly what I
needed.
I still make all
of these as an adult, especially when I'm homesick and
need some
comfort food.
I do have a really decent sourdough pizza crust going lately but given this dreary, cold, late winter season, my own personal
need for
comfort foods in the way
of pancakes, and past history
of pancakes making quite the meal to share with others, this quick little bread - based meal is one I hope you get the time to make.
I dare say we've never
needed comfort food more than we have in the past four weeks, and at a time that's filled with plenty
of challenging days, the silver lining is that this is the right season for such meals.
So I decided I
