In the end, the
soup was much more complex, much
richer, and - to my taste - much
nicer.
A few notes on why I like this
soup nutritionally (I know this is where many of you nod off)... In addition to a
nice amount of vegetable based protein in this
soup (from the lentils), the recipe also incorporates a touch of dairy, vitamin -
rich greens and tomatoes, and good fats.
Rather than making a curry, the broth of this
soup is a mix of coconut milk and vegetable broth to give it a
nice thin, yet
rich texture.
Once the weather starts getting colder, it feels so good to sit down with a
nice warm bowl of
rich, flavorful
soup.
One that pairs well with the acidity of a
nice tomato, basil, mozzarella salad, or with a potent herb like parsley, the one that lightens up the
rich sweetness of this
soup.
