It wasn't until I became a parent that I learned a wise and time - saving truth: it's perfectly acceptable to serve raw vegetables as a side dish, even if they're
not in salad form.

The advantage of making Mexican street corn
in salad form is that it's easier to bring to a potluck barbecue, and you won't get corn stuck
in your teeth and all over your face (one reason my kids don't like corn on the cob).

Make caesar
salad dressing: Combine 2 very finely minced cloves of garlic with 1 — 3 anchovies (to taste) / Mash garlic and anchovies together until they

not comfortable using raw egg, skip it), 1/2 t dijon mustard / Stir these ingredients together, and then, with whisk

in 1/2 — 2/3 C olive oil, whisking constantly until dressing begins to thicken and emulsify / Taste / Add another squeeze of lemon or more olive oil if needed / Refrigerate if
not using immediately.
I also can't eat kale
in any way but chip
form, I can handle
salad though.
I also love my egg
salad, and
not even always
in sandwich
form — sometimes we just bust out a big bowl and sliced baguette.

This could be
in the
form of a green smoothie for breakfast, or a big green
salad for lunch or dinner (iceberg lettuce doesn't count as a green).
Veggies don't only come
in salad form!
I'm
not quite sure what's behind my craving, but I've been eating broccoli
in every possible
form: cooked
in soups, raw as a snack, and roasted
in salads.
It comes
in capsule or powder
form, so there's a «swallow and don't taste it capsule option» for you if you don't enjoy the ground - up -
salad - like flavor of the powder.
Don't forget sea vegetables like dulse, and kelp, which,
in dried flaked
form, are super easy to add to soups, casseroles, sauces,
salads and noodle dishes.
For me, the only time I'm really having cruciferous vegetables raw — and it's
not because I'm scared of the goitrogens; it's just because I enjoy them better when they're steamed — I might have dehydrated kale chips, so it would be
in raw
form, kale
in my smoothie or kale
in my green juice, or I'll make a kale
salad.
While an occasional arugula
salad or cup of coleslaw is
not going to do harm to most folks, it would be wise
not to make a habit of eating / drinking any of these vegetables
in raw
form.
