If they aren't
sliced evenly, they won't cook evenly — you'll end
up with some floppy and some burnt!
And again, the best part is you can serve this
up to anyone — whether they're paleo or
not — and I can pretty much guarantee they're going to ask for a second
slice!
Make sure the
slices are thin enough to bend easily, but
not so thin that they can't stand
up on their sides.
We didn't celebrate St. Patty when I was growing
up either — but I will take any excuse to eat a
slice of that Double Chocolate Stout Mousse Cake!!!

I won't bore you with how to make risotto, but for 2 people, the first uses 2 links of sweet italian sausage removed from its casing and cooked with a little olive oil in a heavy skillet, broken
up into small pieces and moved around until many of the pieces are crisp; then add
sliced and roughly - chopped fennel bulb, cooking until it is somewhat softened; then put a lid on the pan over very low heat while the risotto cooks; add it all together (with butter and parmesan) for the last 5 minutes of the risotto process.
Don't go too thin on the
slice and possibly lighten
up a smidge on the olive oil in the recipe because you don't want the dip to slide right off your veggie stick!
