Since most recipes i make are never banana - y enough, i doubled the bananas, used greek yogurt insteaf of oil, used all brown sugar to
sweeten (figured all that banana moisture did
nt need syrup moisture) and instead of millet added 2 handfuls of
coconut, 1 handful of oats, and a handful of sesame seeds — still
not quite maui, but best ive ever made!
Of course, it wouldn't be tropical without a big helping of
sweetened coconut.

If you can't find the larger strips, regular

You can also use soft
sweetened baker's
coconut, if you wish — this cake is
not overly sweet, so the extra sweetness from the baker's
coconut wouldn't hurt.

Hi, i haven't been able to find any dairy free soya free choc chips, I have cacao powder and a cacao block, just wondering if I melted some with
coconut oil, and
sweetened with xylitol, would be an ok substitute for the choc chips?
I've never seen frozen dried
coconut before, but assuming it's dried and unsweetened (
not the moist
sweetened type used in baking) I assume it would work.
I don't see why I couldn't
sweeten it a bit with stevia and add some shredded
coconut and frozen blueberries?
Also, when your supermarkets don't stock unsweetened
coconut flakes and you use the
sweetened flakes for the recipe, these turn out too sweet.
