I love to add savory flavors to my breads (sun - dried tomatoes, garlic, and olives are
actually my favorite ones), but this time I wanted something really nourishing, so I decided to go for a combination of rye, buckwheat, and wholemeal
flours enriched with seeds and
nuts for a crunchy texture.
I'm afraid I don't have any substitutions but I'm pretty sure coconut isn't
actually a
nut or seed it's
actually a drupe so you may be able to just sub all coconut
flour minus the almond
flour.
In truth, my family
actually LOVES cassava
flour banana bread even though none of us HAVE to be
nut free.

actually flour, but ground almonds (thus it's a

I have been completely wheat free for going on 60 days and can not wait to dig in tonight — Of course, now that I have started baking with almond
flour (I
actually used 1 cup almond, 1 cup flax in this recipe today because I was almost out of the almond) I am coming across articles and blog posts that describe the «horrors» of baking with
nut flours becuase of oxidization.

flour, so I'm not sure what you'll be able to substitute other than another
nut flour (like cashew or hazelnut — both can be found at Trader Joes if you have one near you).
This
nut - free and gluten - free
flour can replace white
flour with similar results - and it
actually rises in baking!
So, there was a lot of people bickering about
nut allergies... but unless I missed it nobody
actually offered a solution past coconut
flour not being an option.
Personally, I get my organic coconut
flour very affordably from
Nuts.com (which is
actually where I do a great deal of my bulk shopping — for
nuts, seeds, dried fruit, etc.).
I modified the recipe a bit using a combination of coconut
flour (which is not
actually a «
nut») and my freshly ground sunflower seed
flour.

Those of you with lactose intolerance, casein, soy, legume or
nut allergies, please note that some gluten - free mixes may
actually contain dairy, soy, bean
flour, sugar or
nuts and this is because these allergenic products may well be produced in the same factory, utilizing the same machinery they use to pack foods containing potentially allergenic foods!
