Unlike white flour, oat flour doesn't have all its nutrients stripped from it and is packed with protein.
3 1/2 cups of oat flour doesn't weigh as much as the sorghum.
I know oat flour doesn't typically substitute equally for whole wheat, so any suggestions you have would be much appreciated!

did make my own
oat flour and paid attention to the measurements.
I didn't coat the chicken in
oat flour, instead I had the husband grill it.
I tweaked it a little — whole wheat
flour,
oat bran, flax seed meal, light on sugar, added walnuts, used Jack Daniels because we didn't have bourbon... but oh my, they are delicious, and I especially love that they aren't sticky / gummy in that way that banana bread so often is.
I don't usually make changes to your recipes, but I used a cup of
oat flour, and coconut sugar.
If you don't have any
oat flour you can use all wheat
flour.
All you need to
do is substitute out 310 g of all purpose
flour for the
oat flour / rice
flour / corn starch.
I
did not have
oat or almond
flour, so I just swapped those out for a total of 2 cups of organic, GF long grain brown rice
flour.
But if you don't have
oat flour on hand, regular
flour will work fine (of course, then they won't be gluten - free).

So I am guessing that an all purpose mix that
does not use
oat flour will not work as written.

In a high powered blender (you can even use just a normal standard blender), if you don't have
oat flour, add your dried oatmeal and pulverize.

do you use just the whole dried date or the date pieces dusted with
oat flour?
If you have
oat flour, it's one cup but if you are grinding the oats in your food processor, you need to start with 1 1/3 cup oats and don't over process (that's partly why mine look so grainy since I started with oats and not
oat flour).
