I made these this morning with some gluten free pancake mix, as a
replacement for the
oat flour, baking soda and salt.

oat flour creates is very dense, slightly chewy, and it gives off a great nutty flavor.
Gellan gum,
oat fiber, citrus fiber, sunflower lecithin, and konjac (Asian yam)
flour are popping up as
replacements for the unfairly maligned carrageenan.
The best
replacement for the parmesan would probably be almond meal or
oat flour.
If you eat them, a small amount of whey powder, cassava or
oat flour could be used as a
replacement.
