The night before I have to work in the morning, I add 1/2 cup of my
homemade oat mix to a jar, add water and let it sit in the fridge overnight.

Oat Mix — 3 cups GF oats (300g)-- 3/4 cup ground almonds (90g)-- 1 cup dates, pitted and soaked * (150g)-- 2 tbsp cocoa powder — 2 tsp cinnamon — 1/2 cup coconut oil (100g)-- 2 tbsp honey
I sprinkle a packet of stevia over the fruit to sweeten it up a bit and add 80g of egg white to
the oat mix for added protein.
For this, just mix together
your oat mix, then layer with peanut butter and whatever jelly you like, until you fill the jar!
Add the egg whites and honey to
the oat mix, and blend thoroughly.
This recipe calls for salted natural peanut butter and a pinch of salt in
the oat mix, just because I like the sweet and salty combo.
Add the banana mix to
the oat mix and stir well to combine, then use your hands to rub it all together.
Aim to rub all the pumpkin paste into
the oat mix so that the mixture resembles a chunky crumble topping.
Add
the oat mix, cinnamon and dried fruit, then mix until all the oats are well coated.
