in a health supermarket (use gluten free option for a gluten free
recipe).
Experiment by substituting buckwheat, millet, or

in your favorite pancake or waffle
recipes.
Rice and flax milks are indeed thinner / less creamy than almond and soy milks, but they would work just fine
in this
recipe, as would hemp,
oat, hazelnut, or coconut (the stuff designed for drinking, not the canned kind, which has way more fat, and thickens or partially hardens

Oat Double Chocolate Buttermilk Muffins
Using at least a blend of gluten - free flours (as I mention
in the
recipe) that include
oat flour helps that tendency and improves the texture.
You can also use chickpea and
oat flour interchangeably
in this
recipe, but if using chickpea, just be sure to cook it through properly as it has a pretty prominent taste when under cooked.
I noticed that you do not use
oat flour
in any of your
recipes.

I also like the addition of

I sometimes use chia seeds
in my overnight
oat recipes to create a slightly different texture and because of the insane health benefits that chia seeds offer.
Like
oat flour, buckwheat flour is gluten free so replacing all the white flour
in a
recipe with buckwheat flour won't yield the best results.
Anyways, to make this breakfast bake taste more cake batter - y and less
oat - y, I took the standard
recipe I use
in most of my breakfast bakes and replaced all the flour with almond flour.
