The original idea for this cake came via this recipe, when I was doing some «oatmeal» research, and it simply looked too good to not to try out.

Most of the baked oatmeal recipes I've seen online have called for an egg, or two but I've left it out.

I ended up coming up with some other flavor combinations: 1) Raspberries and Cream «Oatmeal» which is in my ebook, Awaken (check it out here) and the recipe...

This discovery led me to a lot of wasted time on Pinterest checking out different ideas and recipes for slow cooked porridge and that led me to baked oatmeal.

This particular oatmeal recipe is one of my favorites, and I can't resist making it when there's an extra ripe banana hanging out in the fruit bowl.

Although we excluded oatmeal chocolate chip cookies from this experiment, we included the Neiman Marcus recipe which uses oat flour out of curiosity.

I know, it can take a lot of time too, especially when you make your own recipes (e.g. my baked oatmeal muffins) and then you have to go through, add everything up, and figure out the nutrition for each serving.

The best part of this no cook Oatmeal Energy Ball recipe is the amount of variety you can get out of one kitchen session.

I make baked oatmeal almost every week to take to work through out the week, and this recipe is fast becoming me favorite.

I love how frequently you post and all the amazing recipes you put out there (these oatmeal cup muffins legit have changed my life and saved me an extra 10 - 15 minutes food prepping in the morning before I leave for class), but by all means take some time for yourself and have a breather when you need it!

There are more oatmeal cookie recipes available then we could possibly need, but to weed out decent weeknight dinners can be a little bit more of a challenge, no?
