Place a can
of beans, the green
enchilada sauce and the diced tomatoes and green chilies in a blender and puree until smooth.
Also, you have the good makings
of a traditional Mexican
enchilada sauce, remove the
beans and the tomato products from the chili and add several more tablespoons
of chile powder, some flour to thicken, chopped onion, broth, corn tortillas and a filling
of cheese or your favorite.

enchiladas here at least once a week since my first go at them, and since then I've turned them red (warning veganmofo - ers, pictures include optional goat's cheese), topped them with salsa and baked them, spread a layer

But my choice
of cheese goes back in the day when I would go to a local joint and order
enchiladas, and they would come with a big pile
of red rice and a huge mess
of refried
beans with melted cheddar on top.
forgot to add the egg, and thought the recipe called for a can
of black
beans based on my previous recollection (i think i was confusing elements with the bubble up
enchilada).
To assemble, place one tortilla on a plate and top with a spoonful

I read some
of the reviews and made some changes to the original recipe - included a can
of drained / rinsed black
beans that I mixed together with the
enchilada sauce and chicken.
Tortilla chips are crisped and then folded into a spicy mix
of black
beans, fire roasted tomatoes, and corn kernels to make these mouthwatering black
bean chilaquiles.Love

I substituted
enchilada sauce (we decided we weren't that crazy about chunks
of tomato), and added the sauce and cheese salsa (I used Pace Mexican Four Cheese) to the
bean / meat mix to simplify assembly.
It's brimming with shredded chicken, plump black

enchilada sauce, lots
of fragrant cilantro, and topped with a HEAP
of cheese.
These plantain and smoky tofu
enchiladas are rolled up and baked in spicy sauce and then served with a scoop

of the squash.

When it comes out
of the oven you'll have a wonderful healthy Mexican casserole that has all
of the flavors
of chicken
enchiladas, complete with tender juicy chicken, onions, garlic, black
beans, corn, tomatoes and melted cheese.
Layers
of hearty seasoned ground beef &
beans, cheeses, a layer
of red
enchilada sauce and chopped tomatoes and cilantro leaves makes it a perfect dinner to satisfy any craving.
In large bowl, stir the prepared Spanish rice, frozen corn,
beans,
enchilada sauce and 1 1/2 cups
of the cheese until well blended.
Add any remaining
bean - mushroom mixture on top
of the rolled
enchiladas.
