I just made this with my VitaMixer and the only change I made was that I used 1/2 cup of Coconut Milk plus 1/2 cup
of Choc Almond Milk and then 2 ice cubes.

I used soy milk instead
of almond, used double the amount
of baking powder because I did not have any baking soda, used 1 egg as I found the mixture to be extremely crumbly, and used dark
choc chips which sadly did contain dairy (it's all I had in my pantry, a day before pay day) BUT these were still some kick ass cookies.

I love a good

They may allow slight variations for the addition
of a complementary flavour or a dash
of alcohol — Cointreau and orange zest, Frangelico and a few hazelnuts, rum and coconut, Chambord and raspberry jam, brandy, chilli, mint,
almond, ginger — but pumpkin or
choc chip cookie or red velvet would send them into a tizzy.
