When I started
Cooking On The
Weekends a few years ago, I had no idea that not only would I be continuing my career in an area I'm passionate about, but that I would also gain a whole community
of new friends.
I try to
cook most
of my meals at home, except when I dine out for a few meals
on the
weekend.
One
of my favorite things to do for dinner
on a Sunday is to throw something in the slow
cooker while I work
on getting ready for the start
of the workweek and the enjoy the last bit
of my
weekend.
Recently my dude and I have been consciously making an effort to
cook «more exciting» breakfasts / brunches
on the
weekends, other than scrambled eggs and avocado toast (nothing wrong with that
of course, but sometimes you just need to change things up) and we started last
weekend with these Brown Sugar, Blueberry and Coconut Pancakes!
And I love
cooking on the
weekends so I thought I'd share with you some

Slow
Cooker Chicken Marsala is
on the agenda because I have a lot
of cooking to do this
weekend.
Some
of you mentioned to me that you don't like to meal prep - you prefer to
cook fresh each day, so this week I'm not having you prep anything
on the
weekend.
On the
weekend I avoid
cooking to spend time with family or I try new recipes which requires concentration and a different set
of mind.
The central Texas town
of Brady has staged the World Championship BBQ Goat
Cook - off for more than forty years
on Labor Day
weekend.
This is one
of my breakfast favourites, especially
on the
weekend when there is more time to
cook a relaxing breakfast.

We didn't do much prep
on the
weekend but we are starting the week with a fridge full
of fresh produce and a fresh bot
of cooked brown rice.
A pot
of lentils,
cooked on the
weekend, can easily take you through a week
of meals.
I
cook up large pots
of beans
on the
weekends and then freeze them in 1 cup portions.
And yes, you can also sometimes use canned beans, but if you have time
on the
weekend, it's worth
cooking a big batch
of dried.

I have managed to drop a couple
of activities for next term and hope that if I am more organised with washing,
cooking and homework
on the
weekend the week won't seem quite so stressful.
Time is ALWAYS short, so
cook on the
weekends / nights instead
of TV, and then make variations as the week progresses.
Cook a big batch
of veggie lasagna, grilled chicken breasts, or a stir - fry
on the
weekend so you'll have good stuff to eat all week.
Cook a batch
of these savory mushrooms
on the
weekend and add them to pasta or use as a side dish
on busy weeknights.
I recommend making a pot
of quinoa
on the
weekend when you've got a bit
of free time; the
cooked quinoa will keep in your fridge for up to a week.
I've been placing a lot
of bricks but the next one has to be focused
on the upcoming
weekend and making sure I eat home
cooked meals.
But I also recently found myself without
weekend leftovers
on a Tuesday, so I layered the ingredients for this lentil shepherd's pie into the slow
cooker before I left for work in the morning and when I came home at the end
of the day, cold and tired as usual, what a pleasure it was to arrive home to a warm, ready, and nourishing meal.
Take advantage
of the spare time you have
on the
weekend to
cook a big batch
of spaghetti sauce.
I'm looking forward to this cookbook as I love many
of the recipes
on th blog but some as very time consuming and being a full time mom and working full time
cooking the more elaborate meals are left for
weekends or special dinners.
Some may take prior preparation (like
cooking up a broth
on the
weekend that'll be part
of the meals made during the week).
