of the Eggplant Parmesan recipe from Elana Amsterdam's Gluten Free Almond Flour Cookbook.
A spoonful of sauce and a sprinkling of some shredded Parmesan right before it came out of the oven and I also had my simple version
of eggplant Parmesan!

This mouthwatering vegan
eggplant Parmesan is made with layers
of crispy pan-fried
eggplant, cashew mozzarella cheese, and marinara sauce, baked up to bubbly perfection.
And when I made that determination I already had a couple
of big fat Sicilian
eggplants stashed in the fridge, so I decided to go and celebrate with some vegan
eggplant Parmesan.
I promised you my

of the freezer when it's freezing outside.

What's in it: 8 oz quick cooking farro (I suppose you can use the non quick kind as well) 2 cups roughly chopped heirloom tomatoes Vegetables for grilling (I used
eggplant, summer squash, scallions, corn, and peppers) 2 large cloves garlic Fresh basil Olive Oil Balsamic vinegar Salt & Pepper (and maybe some chili flakes) Optional: cheese
of your choosing (goat,
parmesan, or feta would all be great)
Ingredients about 1/4 cup olive oil 1 onion, thinly sliced 2 cloves garlic, chopped One 14 - ounce can white beans, drained 1 egg 1/2 cup fresh breadcrumbs * 1 tablespoon freshly ground

of half a lemon 1/2 teaspoon thyme, broken up with your fingers 1 scallion, thinly sliced 1 1/2 tablespoons masa harina (just use flour if you don't have masa on hand) Salt and pepper to taste 1/4 cup pesto, homemade or store - bought 1 ripe tomato (use sundried or cherry tomatoes if you can't find a good roma or heirloom) about 1/2 cup Roasted

Going to the grocery store and buying hunks
of Parmesan, obscure
eggplants, and cured Italian meats is something I live for.
Removing all but a strip
of the
eggplant's skin lets the flesh meld with the sauce without falling apart — that's the secret
of this baked
eggplant parmesan recipe.
Tony, a culinary aficionado himself, has appeared on CBS, KTLA and Fox serving up some
of his famous Italian dishes (French Toast Italia Style with Ricotta Cheese) and a Sun Dried
Eggplant Parmesan, and has joined with the the cast

You could really fill these
eggplant roses with any number
of fillings — creamy ricotta whipped with an egg, cheddar cheese and smoked paprika, even cooked ground beef, but
Parmesan and herbs hold these
eggplant spirals together beautifully and still let the taste and texture

eggplant shine through.
Begin with a cup
of sauce on the bottom, layer with 1/3
of the
eggplant, add another cup
of sauce, add some fresh basil, and finally top with 1/3 cup mozzarella and 1/3 cup
parmesan.

eggplant Parmesan.
