GF food has no fiber or has high sugar content, and the specialty flours are expensive!
I think people forget the place
of naturally
GF foods because they simply replace processed
GF foods for processed gluten
foods.
When I look though so many
GF blogs I get the feeling they focus mainly on recreating the
foods they miss instead
of enjoying and emphasizing the great
foods they can have.
Maybe some don't view naturally
GF recipes as enough
of a recipe development accomplishment, or maybe it's simply that others don't need to learn about naturally
GF foods and are only interested in the baking component (especially those who are more experienced).
I also see the point
of the commenter who said eating should be about enjoying everything you can eat with no problem, not just
GF versions
of foods you miss.

of my usual

Adding 1/4 tsp xanthan or guar gum per cup
of flour to your dry ingredients will help mimic the function
of gluten in
foods (add only if your
GF blend does not already contain it!).
I think they are

I have recently started gluten - free life and have been depressed, dwelling on all the
foods I love, and now can't eat, not helped by a series
of disappointing
GF experiments.
I think the
food processor is a must have when it comes to
GF baking, as a lot
of the recipes are going to be crumbly.
In a
food processor, pulse 1 and 1/3 cups flour (
gf blend) with 2 - 3 pinches
of salt.
Take your favorite
GF cookies and throw them in the
food processor (~ 1 1/2 cups
of crumbs should do, add more if needed).

Sensitive to gluten or not, you'll likely feel clearer, lighter, and even lose a few pounds if you make an effort to stay away from most
of the packaged gluten free «substitute
foods» such as
GF cookies and crackers.
