I used Better than eggs instead
of eggs in a shell and mixed it up in my

I only pulsed the oats a couple
of times in my
Kitchen Aid mini chopper and they were still quite coarse, but I'll try the cookies one more time using regular oats to see if I can get the nooks and crannies that make the cookies so appealing.
