These Curried Satay Veggie Bowls take the familiar flavors
of a Thai curry and transform them into something completely different.
This is similar to my favourite peanut sauce formula, with some additional ingredients such as a spoonful
of Thai curry paste, juice of one lime, and so good!
So roasted peppers and aubergine it was, which turned out to be the perfect choice with some leftover farro and a large drizzle
of Thai curry coconut sauce.
This filling soup is full
of Thai curry flavours that can easily be served as a light lunch or dinner - party starter
I like to toss a few on top
of Thai curries or sprinkle them on a bowl of fruit and coconut milk for dessert.

I made this pretty close to the recipe except I used
Thai Red
curry paste as per suggestions from some
of the reviewers.
One
of the things I was most excited to try was a
Thai green
curry (and Pad
Thai and papaya salad).

I changed the glaze a bit since I prefer my meal very spicy: I added one tablespoon

curry paste and switched the sou sauce for Asian fish sauce.
So with my pantry / fridge / bag items, I ended up making an edamame, corn and spinach quesadilla, with cucumbers and ranch and 1/2 cup white rice with a tablespoon

You could also try the massaman
curry paste recipe I linked to in the post, you'd still want to cut out or reduce the number
of chilies, but since heat isn't as essential to massaman
curry you'd end up with something that tastes closer to an authentic
Thai curry.

For those
of you who like a bit more kick, I did a
Thai - flavored
curry version as well.
I feel that the
Thai Green
Curry gets a lot
of love, but the red
curry feels left out.
I made the
