muffins (baked for 7 mins) and 10 regular - sized
muffins (baked for 18.5 mins) with some minor changes: added an extra banana, used a mix
of half dark buckwheat flour and half white whole
wheat flour; decreased brown sugar to 1/4 cup (it was all I had); and used 1/4 cup
of maple syrup.

muffins are baked to perfection using Greek yogurt, whole
wheat flour, honey for sweetness and the perfect blend
of bananas and blueberries.
A big reason why we normally mix regular whole
wheat flour with all - purpose flour in some
of our recipes (such as some
of our
muffins) is because, with their higher protein levels, whole
wheat flours can make baked goods tough.
But I knew that I was able to do it once, so keeping in the original spirit
of the challenge
of baking
wheat - free, I decided to really take a look at the recipe, start from scratch and build it from the ground up, and see if I could make a good
muffin without xanthan or guar gum.
The good news is these Healthy Apple, Maple & Pecan
Muffins are made with whole
wheat flour, coconut oil and no refined sugars (< — that's a HUGE step for me, guys) so there's less guilt, and alllll
of the right kind
of muffin top goodness.
Experiment by substituting whole
wheat or oat flour for up to half
of the flour in pancake, waffle,
muffin or other flour - based recipes.
Note: This recipe was inspired by 100 Days
