For this recipe, I you can either butterfly the chicken breast, or pound it down to 1/2 ″ thickness with the flat
surface of a meat tenderizer.
The easiest way I've found to do this is place the chicken breast in a ziplock bag and pound out evenly using the flat
side of a meat tenderizer.
BUT, when you contain them in a nice ziploc bag and then «crush» them with the flat side
of a meat tenderizer, there's no runaway (or flyaway) pieces.
Grab your flank steak and «stab» it all over with a fork — or better yet, if you have one
of these meat tenderizers, use this.
However, I hate digging out my food processor for small things like that, so I just used the flat side
of my meat tenderizer to pulverize them.
