of adding veggies in your baked goods!
I am not a big fan
of adding veggies to my cakes but zucchini was surprising pleasant.
I've been catching myself cheating A LOT lately on what I feed my kids and this recipe is no exception, I've cheated in this one too and thought
of adding some veggies to this burger to satisfy my» mom wants to give her kids something healthy» inner voices.

Just made this for dinner — I'm eating semi raw at the moment so cooked the sweet potato (and
added some parsnip too), then marinated the mushrooms in olive oil and balsamic vinegar, wilted the spinach with salt and a bit
of chilli before
adding to the cooked
veggies.
I can't wait to make variations
of this recipe by
adding different
veggies.
For those
of you that are green juice addicts I should say that I've tried
adding some greens to this, but it made the flavour a little strange so I think it's best to stick with the sweeter
veggies and a little fruit.

Either choose an assortment
of veggies that require roughly the same cook time, or start with the long - roast ones and gradually
add the other
veggies to the pan as the cook time passes.

added lots
of extra
veggies (zucchini, yellow squash, red pepper, extra tomatoes) because I had them... and just wanted to say THANK YOU because somehow this meal accomplished 2 things I previously thought impossible: 1) make my 3 year old voluntarily eat vegetables (he ate every different kind, amazing) 2) make both my children eat a «mixed - up» casserole.
I also
added a finely diced jalapeno to my dish while sauteing all the
veggies which
added some good spice for those who like a bit
of heat.
If I am using freeze dried
veggies, I
add a little more water, and let them cook and hydrate at the time (meaning I don't
add water and get them hydrated ahead
of time).
My brother will barely eat a veggie, but he
adds a generous handful
of baby spinach and / or kale to his pre-workout smoothie every morning to ensure he gets some
veggies in his diet.
