This time I used
almond butter instead
of cashew for the
cookie dough, because that's what we had, but go with any nut
butter you like best!
To start, I made a super simple chewy
almond butter cookie, which sort
of tastes like an old school peanut
butter cookie to me.
Some recipes call for
almond flour or a combination
of coconut flour and some arrowroot powder, but the
cookie we always have in the freezer uses
almond butter as a base and was created by Danielle Walker
of Against all Grain blog and several cookbooks.
1 very ripe banana 1/2 cup
of fresh blueberries + extra for decorating the
cookies (optional) 2 tablespoons
of milled flaxseeds + 4 tablespoons
of water 1/2 cup
of almond butter (peanut
butter will work as well) 1 1/2 cup
of jumbo oats 1/2 cup
of ground
almonds 3 -4 tablespoons
of roughly chopped hazelnuts 3 tablespoons
of melted coconut oil 3 tablespoons
of maple syrup or date nectar a dash
of vanilla extract 1 teaspoon
of baking powder 3 tablespoon
of almond milk pinch
of sea salt
So first we must make the
cookie batter, which follows the basic instructions
of beating the
butter with the sugar, adding two egg yolks and vanilla and
almond extracts, and then beating in the flour.
Instead
of shortening I used
butter, added more chocolate chips to the
cookie dough and topped the
cookie with
almond joy pieces.
These
cookies have been in the back
of my mind for several weeks, ever since I filmed my how to make
almond butter video.
I've been in love with Blue Diamond Smokehouse and Habanero BBQ
almonds, their coffee
almonds with frozen chocolate chips, cucumbers and hummus, Egg Beaters (usually buy store brand) egg whites only with a wedge
of light Laughing Cow Garlic and Herb or French Onion, and a sprinkle
of dill seasoning, your nut
butter cookie for one (with a few chocolate chips
of course), and watermelon.
The combination
of rice syrup and
almond butter make these bars less sweet, with a toothsome, more substantial savory quality than most other versions, which are more often than not merely sweet
cookie dough made even sweeter with jam.
I also have never thought
of putting
almond butter in a gingerbread
cookie recipe.
We substituted
almond butter instead
of butter in our recipe because for a
cookie recipe to work, you need some fat in it.
I had plenty
of almond butter in the fridge so decided to experiment with these grain free
almond butter cookies.
Ok, but really
almond butter and jelly sandwiches (on Ezekiel bread
of course) were a staple back in the day and these
cookies bring back all those memories!
It tastes fresh and creamy and the hint
of cinnamon and
almond pairs nicely with the strawberries and the
almond butter cookie crust.
It's pretty much the same as the
