I have tried sifting the almond meal to remove some of the bits
of almond skin but this is very time consuming so I may not bother in the future.
Blumberg's team tested the effects
of almond skin's flavonoids alone and then in combination with the vitamin E found in almond meat on blood samples containing LDL cholesterol.
I have read conflicting evidence regarding the value (or not)

almonds but I usually use
almond with the
skin as they contain lots
of fibre and nutrients!

I realized in the middle

So because
of this, and because many recipes call for peeled
almonds, I want to share this short video on how to blanch or peel the
skin off
of almonds.
As you can see, some
of the nut
skin came off my
almonds when I rinsed them, but it makes no difference.

Almonds carry most
of the phytic acid in the
skins.
What I personally did was soak and
skin my
almonds before getting started, and then finish making the rest
of the
almond ricotta while the cauliflower cooked.
I use 1/4 cup
of whole, raw
almonds, (
skin on), with a pint
of water; pulverize for 2 minutes in a blender at high speed.
When
almonds are blanched (soaked in water, usually overnight), the
skins separate from the meat
of the
almond, becoming loose and quite easy to remove.
The only things I could think
of trying are sunflower seeds and
almonds with the brown
skins removed, like blanched
almonds.

I believe the blanching in this case refers to the removal
of the brown outer
skin of the
almonds before they are turned into flour.
Plus I use blanched
almonds to make the butter because
of the phytics in the
skin.
Once the
skin is removed, measure 150g
of sweet potato into a bowl and add the yolks,
almond milk, ground
almonds, baking powder, cinnamon, ginger, cardamon and salt.
I suspect that the marcona
almonds help provide body, without the raw flavor
of raw
almonds, and without the fiber and texture
of the
skin.
The
skins should then peel easily off
of the
almonds.
I apologize that I can't attribute the recipe off hand, but for a super easy way to make your own
almond milk, just soak raw
almonds (1 cup, mine still had
skins on) over night in 1 cup
of water.
I have made
almond milk tons
of times and found a huge difference in taste if you take the
skins off
of the
almonds after soaking — takes a lot
of time, though, so I make coconut milk instead.
