The evening started
with a cocktail hour featuring a smoked, fried potato tossed in black garlic vinaigrette («like an umami bomb,» one guest gushed) and a piece
of the house - made rye bread slathered
with yogurt (house - made), sunflower seed butter (house - made) and studded
with popped
amaranth, onion powder, and a crunchy seed mix which were all, well... you can probably guess.
We began
with the Oaxacan Salad a lovely plate
of delicate butter lettuce, slices
of avocado, mango, toasted sliced almonds, heirloom tomatoes, radish and tossed
with a bright and vibrant mezcal passionfruit vinaigrette then sprinkled
with crunchy
amaranth seeds.
It's made
with amaranth, which means it's gluten free... but let's not go calling it healthy because it has lots
of chocolate and coconut oil and brown sugar and all those things that make a cake taste good.
If desired you may cook this recipe
with only almond flour by increasing it to 2 cups instead
of 1 cup and this way you wont have to use whole wheat flour or
amaranth.
I was seriously nervous this time but I still went ahead
