Sausage Apple and Sage Hand Pies by What A Girl Eats
Gumbo — aka: a bowl
of tasty glue, with a whole lotta rice, shrimp,
Andouille sausage, and some type
of fish
For the
sausage, I brought a pack
of small
andouille sausage and cut them in half.
Normally made with some combination
of shrimp, chicken and
andouille sausage, this recipe takes on an exotic twist with smoky wild boar bacon, chunks
of alligator tail meat and kangaroo
sausage.
Throughout the remainder
of the afternoon, the buffet will showcase a selection
of salads, fresh fruit and vegetables, cheeses, soups, and main dishes like Pineapple Ginger - Glazed Ham, Herb and Horseradish - Crusted Prime Rib with Bordelaise sauce, and Penne Pasta with chicken and
Andouille sausage; along with seasonal side dishes and a dessert display.
You can use kielbasa or any kind
of dry - cured pork
sausage, but spicy
andouille gives this jambalaya a nice kick
of heat.
Ingredients: 2 packages (28 oz)
of pre-cooked
sausage, such as smoked, polish, or
andouille sausages.
A low - country, hickory - smoked blend
of Southern spices, Cajun flair and hand - crafted beef and pork
Andouille sausage
1 cup roux (recipe follows) 2 cups chopped onions 1 cup chopped celery 1 cup chopped bell peppers 1 tablespoon minced garlic 3 bay leaves Pinch cayenne Emeril's Essence to taste (see recipe) 1 pound
andouille sausage, cut into 1 - inch pieces Salt and pepper 6 cups venison stock (see recipe) 1 1/2 pounds bottom round cut
of venison (or any cut, except for the loin and rib area), cut into 1 - inch pieces 1/4 cup finely chopped parsley 1/2 cup chopped green onions 3 cups cooked white rice 2 tablespoons chopped green onions
I also tossed in some
Andouille sausage, along with some veggies and a pinch
of saffron.
Before I took my boys to the pool, I added some sautéed shrimp and
andouille sausage so it would cook for just a couple
of hours.
5 lbs small red potatoes, cut into equal sized pieces 8 ears garlic, halved at the equator 10 lemons, halved 6 big onions, halved at the equator 5 bags crab boil — divided 1/4 cup cayenne 1/2 cup salt 1/2 cup hot sauce 2 oz concentrated liquid crab boil 42 oz smoked polish

sausage or even sliced
andouille chicken
sausage at the end
of cooking time — it's up to you!
And we would break down the
sausage category into a number
of sausage sub-categories, Polish, Italian, Bratwurst, Smoked, Salami,
Andouille, Chorizo, etc..
The limited time menu features two pounds
of boiled Louisiana crawfish, red bliss potatoes,
andouille sausage, and corn on the cob — packed with lots
of Cajun spice,
of course.

Andouille might be one
of my favorite
sausages, although I must confess I've never met a
sausage I didn't like.
Onion, apple, and
andouille sausage provide textures and a depth
of flavor that makes every bite a bite to remember.
