I found the cake kept well for a couple of days, though by day two, a pool
of apple syrup had formed on the plate.

apple juice is pretty important for both the flavour and the texture
of these muffins, so I would really recommend using it although it could be worth experimenting with a blend
of almond milk and maple
syrup.

The mix
of apple puree, banana and coconut oil gives the loaf a soft, squidgy feel, while the juicy raisins and maple
syrup sweeten each bite perfectly.
The rest is amazing too though, the soft sweet slices
of apple, the melted wild blackberries mixed with cinnamon, the subtle caramel touches
of pure maple
syrup and the browned crispy layer
of oats on the top — those are all pretty amazing.
The second one I made, I halved the
syrup and used 1 Tablespoon
of maple
syrup and 1 Tablespoon
of apple juice.
The reason I liked this was because the pancakes weren't too sweet — the sauteed
apples on the side and the sugar free pancake
syrup was enough — and my boss loved the crunch factor
of the granola.

I didn't add any extra sweetener as I found the
apples and the raisins sweetened it enough, but my husband put maple
syrup on his, and we both had it topped with some raspberries and a little bit
of warmed up cashew milk.
The modifications I made are as follows: Agave

of honey, only 2 bananas & 1/2 an
apple, and added 1/3 C
