This version is made up
of layers
of thinly sliced zucchini, rosemary infused brazil nut cheese, plum tomatoes and
avocado basil
pesto.
It's my favourite
pesto yet — vibrant, bursting with flavour and extra creamy, thanks to the mix
of cashews and
avocado.
Then make the
pesto by simply adding all the needed ingredients (juiced lemon not whole and
of course remove the
avocado from its skin too) into the processor and blending with a little water until smooth and creamy.
I've tried every iteration
of pesto imaginable, but I'd never thought
of avocado.
I love topping them with yoghurt (I use a plain coconut yoghurt), sun - dried tomato
pesto, chopped tomatoes, slices
of creamy
avocado and a sprinkling
of chives, but they work with so many things.
Pesto adds such bright flavor,
avocado and egg are rich and fatty in the best way possible, and yet the lack
of a heavy bun makes this burger feel light and fresh.
Assemble the sandwiches by spreading about a teaspoon
of mayonnaise on the bottom half
of each roll, then layering on the lettuce, two pieces
of tofu,
avocado slices, and the spinach
pesto.
I like to nix the bun for some fresh tortillas or a stack
of crisp lettuce, then schmear it with
pesto, stack it high with a juicy burger,
avocado, and that runny egg.

You could freeze it, but the
avocado make it turn a bit dark and the texture doesn't remain quite the same so I would suggest eating the
pesto within 2 to 3 days
of being made!
Scoop a tablespoon
of the
pesto onto each slice
of bread, then top one side with the tomatoes, mozzarella,
avocado, and basil.

This sauce is sort
of a mix, or should I say beautiful union, between
pesto and guacamole, made with garlic, basil, lemon juice, jalapeno, and
avocado.
This
avocado chickpea salad requires only a few minutes
of prep time (as long as you've got the
pesto ready) so I can't imagine why you wouldn't just assemble this the day
of!
It also takes well to a number
of toppings, including sliced
avocado, hummus, roasted chicken and
pesto.
First
of all it has my two favorite foods —
avocados and
pesto.
3) To assemble the toast: Toast your bread, smear a thick layer
of pesto on, thinly slice your
avocado and fan over your toast, and finally place your thinly sliced tomato on top and sprinkle with salt & pepper.
Ingredients: For the
pesto: 1 small
avocado 1/2 a lemon 1 clove
of garlic 2 Tablespoons
of nutritional yeast 2 Tablespoons
of olive oil Salt to taste
Layer
avocado, red pepper, onion and mushrooms over
pesto side
of bread slices, dividing evenly.
The hands - down easiest dish that I (David) know (and make when I'm alone with the kids and have max 10 minutes to prepare dinner) is to cook a package
of fresh gnocchi, mix a store - bought
pesto with mashed
avocado, add a little extra lemon and olive oil and just stir everything together with some canned chickpeas and cherry tomatoes on top.
