Baby Spinach and Butternut
Squash Salad is full
of the flavors
of Fall, and you can easily turn it into a a whole meal.
I find most disturbingly sweet, reminiscent
of pureed
squash baby food, and not at all appealing, but this one sounds fantastic.
3 cups butternut
squash, cubed 2 cups green beans, trimmed and cut into 2 - inch pieces 1 cup, packed,
baby spinach 1 package extra firm tofu, cut into 1 - 2 inch cubes 3 tablespoons extra virgin olive oil 5 garlic cloves, chopped 1 tablespoon chopped ginger 1 small shallot, finely minced 1 serrano chili, chopped 14 oz (1 can) coconut milk salt and pepper to taste pinch
of chili pepper flakes (I used bird's eye chili flakes, which is hotter than regular red pepper flakes.
And the versatility
of garlic goes beyond its ability to ward off vampires (although that's pretty awesome and totally legit) as you'll see in today's recipe (
Baby Squash Garlic Scape Pasta) which features garlic scapes, those spiral stems that form above the garlic.

For those
of you who think eating healthy can not be filling, I would like to introduce you to my delicious butternut
squash lasagna rolls, filled with sauteed
baby bellas and kale.
We adapted the
squash baby cakes recipe because every store we went visited was out
of spaghetti
squash (seriously, not a single one).
Mine included bell peppers, onion, yellow
squash, fresh tomatoes, a whole bag
of baby spinach, a can
of field peas and one
of butter beans.
shrimp (3 points), 1 ounce part - skim mozzarella (2 points), 8 ounces
of spaghetti
squash (0 points), 3/4 cup tomato sauce (0 points) and 1 cup
baby spinach (0 points).

So I simply made some quick - cooking barley and folded in cubed and sauteed butternut
squash and
baby bellas whose flavor I deepened with a sprinkle
of nutritional yeast.
Still, your grocer is likely to have bags
of baby spinach which pairs perfectly with small cubes
of roasted butternut
squash.

squash, sliced 1/2 small onion, chopped 2 cloves garlic, sliced 4
baby bella mushrooms, sliced 1 (14 oz) can whole peeled tomatoes in juice 1/2 tsp dry basil 1/2 tsp dry oregano pinch
of rosemary pinch
of red pepper flakes 1/2 tsp kosher salt fresh ground pepper to taste

This beautiful dish is the perfect picture
of autumn — the first pickings
of baby lettuce leaves from our winter garden bed mixed with long - awaited butternut
squash tanned from the summer sun, sprinkled with sweet and spicy garden onions retrieved out
of their winter storage, and topped with fresh walnuts from... umm...
A comforting and eye pleasing pasta dish made with oven roasted butternut
squash,
baby arugula and a creamy cheese sauce with a hint
of rosemary.
Add some
of the black beans, butternut
squash, caramelized onion, and
baby kale to one side
of the tortilla.
This bright green dip
of sweet peas, parsley, and luscious pistachios is great served with brightly colored vegetables —
baby carrots, sliced red bell peppers, rounds
of yellow
squash, and thin wedges
of raw sweet potato.
Put hot drained vegetables in a large bowl and use a stick blender to chop and blend the onions carrots and
squash until they are the consistency
of coarse
baby food (in fact, if you have a
baby, take some out at this point and reserve for
baby).
One
of my favorites (if not the biggest favorite)
of all these
babies is definitely spaghetti
squash.
I used spaghetti
squash instead
of pasta and
baby portabella instead
of button mushrooms.
2 fresh tomatoes 1 red or yellow bell pepper 2 packages romaine lettuce hearts 1 8oz package / bag
baby spinach leaves (6 cups or more) 2 hass avocados 1 bunch
of celery 2 heads cauliflower (or 6 cups total frozen florets) 1 large spaghetti
squash 1 small head raddichio 1 bunch fresh basil
Next add a layer
of squash planks and top with a layer
of baby spinach, then spoon on the sausage mixture, followed by the sauce.
I'm obsessed with all varieties
of winter
squashes, and luckily, my
baby shares my palate.
Turn off the heat and add any
of the following optional add - ins that you are using:
baby bok choy / greens, spaghetti
squash «noodles», beans / lentils.

It worked great as the sauce for a primavera style pasta that was stocked full
of baby tomatoes and summer
squash.

baby breakfast blend?
To get it, try giving your
baby squash, which has lots
of that vitamin as well as vitamin A. It's also an easy texture for
babies to handle and it's naturally sweet.
You might offer your
baby small chunks
of banana, bits
of cheese, cooked
squash or cooked carrots.
Most types
of squash are good
baby choices — but stay away from spaghetti
squash for now, since it can be too stringy and hard to digest, and may be a choking hazard.
I put the
baby food tubs back, went to the produce aisle, and instead spent about $ 15 on a whole acorn
squash, a bunch
of bananas, several sweet potatoes, apples, and whole carrots.
If you follow the principles
of baby - led weaning, use like you would butter or any other fat — for example, mashed into a starchy veggie, like sweet potato or
squash.
Because
of their creamy texture we typically give
babies winter
squash like Butternut or Acorn, but summer
squash also makes a nutrient dense and healthy homemade
baby food puree.
A mild tasting vegetable, such as green beans, peas,

I was scared
of squashing my

of foods for a variety
of stages; the
baby options include single fruit purees such as mango, banana and butternut
squash.
Some varieties
of summer
squash are as follows however the Zucchini and Yellow are the best choices for
baby's first summer
squash experience.
Every time I get a little bit
of baby fever, I look at my daughter and the thought is immediately
squashed.
This
squash can be mashed or pureed for your
baby — and the remainder would make a wonderful side dish to accompany the rest
of the family's meal!
Usually by the time a
baby gets to 6 months, they begin eating a variety
of solid foods and as long as parents are careful to include iron rich foods (winter
squash, sweet potato etc.) along with vitamin C rich fruits and vegetables (vitamin C assists with iron absorption) supplementing with iron drops shouldn't be necessary.

I did add a bit
of water to create a smoother consistency, and discovered added water also evens out some
