I've been making a lot
of baked oatmeal with berries for breakfast and while I enjoy it, I was ready for something different.
They're basically like little
bundles of baked oatmeal perfection, and I'm going to come back to this recipe again and again.
OK maybe some of you don't find that quite as exciting as I do, but I was SO excited to see how great quinoa was as
part of this baked oatmeal.
This healthy chunky monkey breakfast bake combines the light and fluffy texture of a muffin with the hearty staying
power of baked oatmeal.
Now this particular version
of baked oatmeal probably isn't the healthiest of the flavors I've made, but it is definitely the most delicious.

worth of baked oatmeal with you guys.
I've never really known what rhubarb is, but I love all
foms of baked oatmeal, so simply must give this a try!
