With all those above considerations accounted for, and after converting and perfecting nearly
all of my baking recipes to use a single flour with delicious and reliable results (I always rely on Authentic Foods Superfine Brown Rice Flour), there's still a need for an gluten - free, dairy - free, all - purpose flour mix in my baking repertoire.

Maple syrup has worked as a substitution in

Do not substitute Dutch - process cocoa in
any of the baking recipes as it has a different level of acidity which can affect how the baking soda or baking powder works in the recipe.

Hi Julie, I notice
some of the baking recipes include spelt flour or a combination of spelt and almond flour.
I use guar gum as my binder in this recipe (as I have started using solely or in combination with xanthan gum in most
of my baking recipes) because I find the cookies maintain a longer shelf life and stay true to their just - baked texture.
I substitute applesauce for part of the oil in most
of my baking recipes.
