I am a fan
of bean chili — I pick up dried beans at Sprouts off — but didn't even think about any more reasoning behind that either other than that being easier on my wallet!
My version includes a quick homemade version
of bean chili and a creamy, cauliflower - based cheese sauce.

Tonight I made quinoa tacos by using 1 cup quinoa, 1 cup corn, 1 cup organic vegetable stock, 1/2
of a jalapeno, diced onion, 3 garlic cloves, 1 can organic black
beans, 1 can fire roasted tomatoes, and cumin /
chili powder / salt / pepper / turmeric to taste.
I think that may be a go for the next batch
of chili or black
bean soup, neither
of which can be that far off.
Packed with lean beef, black
beans, and lots
of vegetables, this

of beans every month or so and then cook them — freezing for easy, quick meals when
beans are required like homemade
chili.
